Kitchen Adventure: Marshmallows

After my marzipan semi-failure, I was a little edgy about trying another candy recipe, especially one with a reputation for possibly making a sticky, stringy mess. This marshmallow recipe is from Deb of Smitten Kitchen. I had high hopes for this recipe, and amazingly I pulled it off.

While the syrup boiled, I greased and coated the pan
with some powdered sugar.

At first I was worried there was
too much gelatin.
But I really shouldn't have been.
Approximately four hours later, I had a giant marshmallow!
Which I then cut into strips and subsequently cubes.
This recipe was actually a breeze. And after the warning from Deb's post about the possibility of making a mess, I was extra careful not to be an obsessive bowl scraper. I was actually so impressed with this recipe, that I would consider it making it again without a second thought. I'm thinking that some s'mores are in order next summer!
