Green Eggs and Ham

I've been toying with the idea of an egg salad without mayonnaise for a couple of weeks now. I've never been overly fond of the taste of it, and a healthier substitution is always welcome. So when the title of a Dr. Seuss book popped into my head, during my restless 2:20AM brain this past week I knew I had to try it.

Green Egg Salad
Ingredients:
2 eggs, hard boiled
1/4 an avocado, cubed
1/4 teaspoon kosher salt
Juice of half a lime
1/4 tsp. ground cumin
1/4 tsp. ground coriander seed
1/8 tsp. ground red pepper

YIELD: 1 serving

Remove the shells from the hard boiled eggs and halve them on a cutting board.
In a small bowl, combine the cubed avocado, egg yolks, salt and lime juice.
Mash with a fork until creamy.
Chop the egg whites and add them to the mixture. Add the remaining spices and stir. Serve. :)
