Chewy Oatmeal-Cherry Cookies

Chewy Oatmeal-Cherry Cookies
Reciped adapted from Baking Illustrated

1 1/2 cups (7.5 oz) unbleached all-purpose flours
1/2 teaspoon baking powder
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon salt
13.5 tablespoons unsalted butter, softened but still cool
1/4 cup (62g) unsweetened applesauce
1 cup packed (7 oz) light brown sugar
1 cup (7 oz) granulated sugar
2 large eggs
3 cups old-fashioned rolled oats
1 cup dried cherries, tart or otherwise

1. Preheat the oven to 350°F and place one rack in the middle of the oven.
2. In a small bowl, combine the dry ingredients and whisk.
3. In the bowl of your standing mixer, beat the butter until creamy. Add the applesauce and beat until thoroughly incorporated.
4. Beat in the sugars until mixture is pale and creamy.
5. Beat in the eggs, one at a time, until thoroughly incorporated.
6. Using a rubber spatula or wooden spoon, stir in the flour. Mix until no flour sprays remain.
7. Add in the oats and cherries, stir until incorporated.
8. Using either a cookie scoop or tablespoon, drop rounded tablespoons onto a baking sheet covered with parchment paper.
9. Bake cookies for 13-15 minutes or until golden brown and crisp around the edges. Cool 2 minutes on the pan before moving to a cooling rack.

I rather like the consistency of this cookie. It's chewy but not in a Butterfinger-stick-your-teeth-together kind of way.  The cherries were a little large for the size of this cookie, so I think next time I make these I will chop the dried cherries up beforehand.  I was happy to see that they worked out to be roughly 95 calories a cookie too! I got to have two of them as my night time snack. :)
