Cranberry-Apple Chicken Salad

Evidently, Subway is doing monthly specials subs this year. May's sub was the Orchard Chicken Salad which I liked so much that I decided I wanted to make my own version.
Cranberry-Apple Chicken Salad
inspired by Subway's Orchard Chicken Salad
8 oz. chicken, cooked and finely diced
1/4 cup (48g) regular mayonnaise
1/6 cup (20g) dried cranberries, coarsely chopped
3/4 cup (80g) green apple, finely diced

1. Perform preparation as necessary, e.g. dice apple and chicken.
2. In a medium bowl, combine all ingredients and stir until thoroughly combined.

As for bread, it's up to you. Personally, I'm a huge fan of English Muffin Sandwiches as you can see above. Ciabatta would also work.

You might notice that I'm using full fat, regular mayonnaise in my recipe. I've started doing this in certain cases because the reduced fat versions have unnecessary added ingredients, and because it really only works out to about a tablespoon of mayonnaise a serving. If you want to substitute a reduced fat mayo, go for it but know that the nutrition information will change!
