Weekly Weigh-In: 04/22/2011

Weight: 125.2
Body Fat: 20.2% + 3 = 23.2%

It feels like this week has lasted an eternity. I suspect it's because my body spent the first half of the week being profoundly confused as to what time of the day it was, or even what day it was.

(It's Friday, right?)

I'm pleased with the slight downward trend in my body fat measurements as I would like to get back to where I was last summer for my racing season.  I'm hoping to blow a few of the times for some of the 5Ks I raced last year out of the water this year. Hopefully, my first one coming up in just a mere week and two days will have good weather with very little wind. I don't relish running up hill for the first mile and a half with winds gusting around me.

As it's Easter this weekend, I'm celebrating by dyeing eggs tomorrow with Eric, and then hiding his Easter basket on Sunday morning. I've also got plans to make a nice dinner for two with a menu that looks a little like this:
Fresh Homemade Pita bread
Garlic and Roasted Red Pepper Hummus

Main Course
Feta-Stuffed Lamb Burgers on Rosemary Buns
Orange-Cinnamon Glazed Carrots
Fresh Baby Greens salad with a Simple Lemon Vinaigrette

Baklava Triangles
Koulourakia (Greek Butter Cookies served around Greek Easter)

I'm planning on making most everything on the menu from scratch, even the pita bread. Not the Phyllo dough though, that stuff is already frustrating enough to work with when it's premade.  If everything is actually good, I'll share my recipes with corresponding pictures next week.
