Kitchen Adventures: Lemon-Glazed Blueberry Muffins

I really wanted to make doughnuts this week, but alas, I lack a candy thermometer to take the temperature of the oil.  I decided to go with Lemon-Glazed Blueberry muffins instead, having just purchased a bag of frozen blueberries.

I've taken quite a liking to recipes that utilize melted butter instead of room temperature butter. It just makes the recipe so much faster.  For this recipe, the egg is first added and whisked until a light fluffy yellow color, the sugar is then added and whisked thoroughly. Afterwards, the butter is added in two-three separate additions and whisked until thoroughly combined.

I didn't actually have any sour cream on hand so I substituted the plain yogurt I had around for the banana bread recipe.  It was added in three additions and whisked until just combined each time.
I seem never to have pictures of the folding step! This is because folding is a delicate process and I don't have time to stop and take pictures. Perhaps when I move I'll enlist someone to be my photographer. *shifty eyes at Eric*

Once the batter is folded, you can use a large spoon coated in cooking spray to scoop the batter into the muffin tins for baking.

While the muffins are baking, the lemon zest is combined with some sugar and stirred. In a pot (not shown) the lemon juice and some sugar is boiled until a syrupy consistency is contained.  Once the muffins are done and have cooled for five minutes, the tops are brushed with lemon syrup and dipped into the lemon zested sugar.

I rather enjoyed baking this recipe. I was able to do it the first time before work and take fresh muffins in with me.  It was simple and tasty, and only 210 calories (roughly) a muffin. They were excellent with a cup of coffee. This is definitely a recipe I will be adding to my brunch repertoire.
