Nearly empty pantry? No problem!

No, the picture is not out of focus. The cover of the book is just really that blurry.
I haven't been shopping in a while. Longer than a while actually, about two weeks. So tonight when I returned from my run and peered into my refrigerator, I was mildly shocked at how little food is in there. I poked about the cupboards for a few minutes before deciding on a very basic rendition of breakfast for dinner.

More after the break...

To cover the protein, I've my two egg white, one egg scrambled eggs there with a touch of salsa, some freeze dried cilantro and a pinch of taco cheese. I also have half a serving of my standard breakfast (steel cut oats w/ a half tablespoon of dark chocolate peanut butter and 1.5 oz of banana) to accompany the protein.  The point I'm trying to make here is that just because your pantry might be running near empty like mine is, you can still eat healthy with a little creativity. :)

I've finished chapters one and two of Brain Training For Runners and am quite taken with this book.  It's definitely got some departures from the traditional running training standard, but it makes a lot of sense.I suspect that I am going to end up highly recommending this book, but I'll finish out the major chapters before I make that call.

Eric's coming over tomorrow and we're going to document the second part of the pizza making series. Perhaps he'll even let me take a video of him shaping the dough!
